This will be a summer favorite, fresh vegetable Spring rolls, simple, easy and delicious

Yesterday we had friends over and it was a super sunny day. I had planned to make coconut curry over rice for lunch. I was also planning a big green salad as well, but by the time we came out of spin class at 10am the sun was already shining bright-it was a day for spring rolls-in addition to the planned curry, rice and green salad.

I grabbed a red bell pepper and a couple of mangoes before heading home to prepare a feast. In the video below I go through the steps to make your own fresh spring rolls. I didn’t use sliced mango as I didn’t have when we filmed. Add in herbs you like, I particularly enjoy finely chopped basil and mint. And remember, everything, including spring rolls, are better with practice, even the wonky looking ones taste oh so good.
